Food and Beverage Manager - MilnertonFull job descriptionJOB TITLEFOOD & BEVERAGE MANAGEROCCUPATIONAL CATERGORY1 – Legislators, Senior Officials and ManagersOCCUPATIONAL LEVELTop ManagementJOB OVERVIEWThe objective of this role is to ensure the smooth and efficient running of the Food and Beverage department to achieve and exceed financial budgets and targets and to ensure smooth operations and great guest service through implementation and management of standard operating procedures.SUPERVISORHotel Operations Manager and General ManagerJOB LOCATIONCape TownHR CONTACTHR Clerk/HR ManagerRESPONSIBILITIESTo plan, organize, delegate, and control all the activities of the food and beverage department including restaurants, bars, events and in-room dining.To analyse weekly occupancy and event forecasts and to ensure each outlet is staffed and resourced appropriately in terms of operating equipment required.To communicate the overall hotel budgeted income and expenses with food and beverage management and ensure that each outlet receives a breakdown of their required revenue targets and expense controls sheets.To conduct daily, weekly, monthly, and quarterly stocktakes for food, beverage, guest and cleaning supplies and operational equipment.To check daily food and beverage revenue reports and cash ups to ensure accuracy in terms of both revenue and daily banking and that accounting standard operating procedures are met and maintained.To ensure the full F&B department and all its outlets remain properly stocked to meet set par stock levels and in line with weekly forecasts.To create, implement and manage a staff training and development program for the food and beverage department and all its outlets with the assistance of the HR department.To draft, implement and maintain Standard Operating Procedures, incorporating service, physical and brand standards, for all Food and Beverage outlets to ensure delivery of great guest service, meeting and exceeding of health and hygiene standards and achieving great guest feedback results and to ensure a unified standard across all outlets.To draft, implement and maintain a Food and Beverage Marketing plan with the assistance of the Sales and Marketing Department to acquire and maintain customers for all food and beverage outlets and department as a whole.GOALSTo grow overall occupancy, revenue and average room rates for the hotel through targeted sales actions to the various market segmentsTo act as a brand ambassador for the hotel in every aspect of the job and to positively build the reputation of the hotel in the travel market through professional client engagement, marketing and sales promotions and by providing an efficient, friendly and excellent customer serviceKNOWLEDGE, SKILLS AND ABILITYA passion for salesStrong organizational, analytical and administrative skillsProficient use of Office 365 suite including preparation of digital presentationsAttention to detailGoal driven and able to meet deadlinesThe ability to work under pressureThe ability to work autonomously as well as part of a TEAMA professional and positive attitude to be maintained at all timesEDUCATION AND EXPERIENCEDiploma in Marketing or Sales or Hotel Management or related field5 years of experience in a hospitality related sales position – preference to be given to specific hotel/resort experienceCompetence in office software including outlook, word, excel and powerpointExperience in Opera PMS Sales and Catering or other CRM software would be adventageousRelocation costs are not paidPlease consider your application unsuccessful if you do not hear from us in 14 daysJob Type: PermanentPay: R30 000,00 - R40 000,00 per month
